Pleurotus citrinopileatus more commonly known as the golden oyster mushroom has a flourecent yellow color that can be used to bring a dish to life without overwhelming the main ingrdients. It has a very light earthy flavor that is coupled well with delicate dishes like rice, seafood or shellfish. With much smaller caps it lends itself to being a very easy mushrooms to layer throughout an entire dish.
